Garlic Roasted Potatoes
This is a favorite that I learned from my sister. Makes a wonderful side dish and if properly “over” prepared can be the main coarse. My sister puts this together on a grill but prepped the same way it can be easily roasted on the hot coals of a campfire.
- 1 Large Potato
- 1 Pad of Butter
- Fresh Diced Garlic or Garlic Powder
- Dash of Salt (optional)
- Seasonings (to taste)
- Favorite Toppings
Put a slice in your baked potato down the center going the length of the spud. Put a number of cross slices intersecting with the long slice. Make no slice deeper that 3/4 of the way through the potato.
Place your spud on a piece of aluminum foil that is large enough to wrap the potato completely.
Divide up your pad of butter and disperse it across the top of the potato. Add the Garlic (fresh is best) then sprinkle with your salt and seasonings. I love Basil with mine!
Wrap the foil around the tater and set on hot (non flaming) coals in your fire pit or on your grill top.
Rotate every 10 minutes or so.
Roast for 1 hour or until it is soft.
Open carefully and Plate
Top with anything you like! Left over bacon (is there such a thing?) is great. Chives, Cheese, Sour Cream or maybe a spoonful of Chili or Stew.
